At the AI Impact Summit 2026— the leading worldwide gathering of artificial intelligence held at the Bharat Mandapam, New Delhi— food was not just something to eat: it was also used as a demonstration of AI-driven logistics and convenience in the real world.  Delegates ordered over 2,000 meals using Swiggy’s AI Smart Kiosks set up in the venue during the two-day event, thus enabling them to avoid long lines while attending sessions and networking events.

Instead of visiting traditional food counters, delegates ordered from an exclusive menu via the Swiggy app and then collected their meals from the AI kiosk.  Orders were ready at the designated location for collection, so they didn’t interfere with the agenda of the summit.

Most Ordered Dish: Veg Snacker

According to various reports on order data, the Veg Snacker was the most popular food item at the summit, clearly demonstrating its popularity.

This dish is ideal for delegates looking for a fast, simple, and portable meal that they can consume without interrupting their busy schedule.  This is especially true during peak lunch hours.

Most Ordered Beverage: Coke

Coca-Cola was by far the most ordered drink, which shows how much the drink is still liked by even the most modern, technologically oriented crowds who are very busy on their respective schedules full of discussions.

The primary focus for eating during intense summit sessions was on hydration and quick refreshment options rather than on long sit-down meals.

Large group orders included burgers and fried rice.

More than just individual preferences, a few high-volume group orders attracted lots of media attention, such as:

  • On Day 2, one attendee ordered 40 burgers at once — the largest single order seen in one transaction.
  • The second largest order consisted of 16 plates each of veg fried rice and chicken fried rice, which created one of the most expensive single meal bills – approximately ₹12,000 — at the summit.
  • The bulk orders represent a combination of what guests enjoy to eat while also reflecting the types of meals selected for group networking as many teams and/or delegations chose to enjoy common comfort foods when sharing their break times together.

Food technology implemented was on display through the use of the Swiggy system used to run the summit logistics. The Swiggy system was described as a “live food-tech demo” and contributed to smooth summit activities by not having traditional queues and crowd bottlenecks. There were over 100 delivery partners servicing eight kiosk stations throughout the summit, and all 100 were operating during lunchtime, especially between 1 pm to 2 pm on Day 2 to keep pace with the lunch rush, which did not slow down any other activities at the summit.

The guests appreciated the efficiency of the system, which allowed for them to receive notifications in real-time when their orders were ready and to therefore spend less time away from the keynotes, panels, and networking discussions at the summit.

Contrast With Curated Dignitary Menus

There was an effort on the part of the summit hosts to provide more custom elaborated menus, prepared specifically for dignitaries/leaders that are different from the crowd sourced preferences of the meal.

An example of a custom meal would be the allergen free working lunch for Global Leaders that was created for PM Modi, the Allergen free work lunch food consisted of Indian regional variety such as:

  • Nimona Kebab (Green pea kebab)
  • Kham Khatai (Moong Lentil Patties)
  • Kashmiri Nadru Kurkuri (Crispy Lotus Stem Chips)
  • Zaffrani Subz Pulao and Thepla
  • Rose & Coconut Pudding and Ramdana Anjeer Ladoo

The meal was a representation of the diversity of Indian food and the nutritional attributes while also considering the multiple international dietary requirements of the attendees to the summit – minimising the differences in experience and expectations both financially and gastronomy of the attendees.

The ordering information included below from the All AI Impact Summit Order Data provides a glimpse into how International attendees are looking to balance technology, convenience, and Cultural Discovery through their taste:

  • Attendees purchased predominately quick and familiar comfort food.
  • Attendees purchased beverages predominately (ie Coke) due to their busy schedule.
  • Attendees generally ordered in large groups, showing that the majority of attendees were eating in team/s on a casual basis, as well as wanting to have the opportunity to network with others over the dining experience.
  • The dining trends of attendees can be seen in both the domestic and elite menu presentations that were provided to the dignitaries, which suggest the types of food preferences that these two significantly diverse audiences have and the degree of hospitality that the Summit Organisers were intending to provide through the dining experience.
